This original design from Stephen Benison Sugar Artistry is perfect for use with Sugar Florist Paste (SFP), sugar modelling paste and Cocoform modelling chocolate. The cutter set includes full-colour instructions on how best to use the cutter, as well as design ideas to inspire you.

How to Use the Trailing Leaves Cutter

  1. Roll out a small piece of paste into a thin sheet and allow it to relax. Lay the paste over the cutter and roll over it with a small rolling pin.
  2. Gently tap the cutter on the edge of a non-stick board and use a soft paintbrush to remove the cut-out.
  3. Place the cut-out on a foam pad and indent the leaves with the edge of a bone tool. The shape needs to be gently cupped from side to side.
  4. Place the cut-out on a sheet of kitchen paper and highlight the edges with lustre dust food colour.
  5. Brush the back of the trailing leaves with a little cooled, boiled water and attach them to the side of the cake.

Alternative Uses

Another way to use the Trailing Leaves Cutter is to make a cut down the centre, open the two sides out and secure it to the side of the cake at regular intervals, using a paper template to ensure it is evenly spaced. You can also cut out small sections of the leaves to use as an additional decorative piece.
