Baker-turned-gardener Hayley McKee presents a collection of earthy, seasonal bakes in her book, Sticky Fingers Green Thumb.
She turns to vegetables, herbs and edible flowers to create treats in which ‘the ingredients [are] familiar, the colourings genuine and the flavours unmasked’. As you’d expect, many of the bakes are quite rustic in appearance but it’s the flavour combinations that make them really intriguing. The Porcini Caramel and Chestnut cake and Beetroot and Rose Truffle cake both use vegetables to create a sweet/savoury balance and develop complex flavours.
