Greenery is the pantone colour of the year for 2017 and it is set to inspire a variety of foliage focused cake designs. Delicate sugar leaves and metallics compliment clean lines, tall tiers and a pared-back colour scheme for a sophisticated look.
2. Rock My World
Geology has never looked so good! Marbled sugarpaste tiers, geodes made with isomalt and touches of gold leaf make for a fashion forward cake design.
Combine sunny colours with exotic flowers and foliage to create your own tropical paradise. Use the step-by-step project inside this issue to recreate Emily Hankins' stunning hummingbird hand-painted design.
4. Fairy Tale Romance
Adding moulded details, sugar roses and butterflies to cakes hints at happily ever after, or go full storybook with illustrated castles and meaningful quotes written with an edible food colour pen.
5. Floral Focus
A single, centralised arrangement of flowers creates a striking focal point. Use big blooms in bright colours against a textured white tier created with either edible lace or piped royal icing for maximum effect.
6. A Light Touch
Just a hint of colour exudes romance and elegance, whether it’s a pale tone across the whole design, a subtle wash or softly painted details. Add sugar flowers in soft tones and compliment them with light, subtle foliage, such as eucalyptus leaves.
